Fine. I have a confession: I've spent an embarrassing amount of my life hunched over a pile of chips in Richardson, chasing that perfect ratio of cheese to crunch.

You know the drill—you either hit the polished spots near CityLine where the cocktails are as serious as the food, or you follow the scent of trompo to a family-run taqueria off Main where the birria falls apart like a love letter. I ate my way through both extremes, plus several glorious, chaotic stops in between, and I tipped a glass to Jack the RIPA at a brewery patio while doing it.

These are the twelve plates I'd defend with my life.

I walked into Sueño Coctelería Mexicana with no plan and left with a new obsession. The service is the kind that makes you feel like a regular even on your first visit, and the staff’s suggestions? Every single one landed. I let them guide me through the flavor combinations, and honestly, I’ve never tasted anything like it. The drinks are crafted with such care that they could steal the show, but the nachos hold their own with these wild, out-of-this-world toppings that keep you guessing. Worth every stop, every time. I’ve already planned my next trip back.

AÑEJO MEXICAN GRILL & BAR is the kind of place where you show up hungry and leave feeling like family. They bring out free chips and bean dip before you even order, which already wins me over, but then the queso arrives and it’s that traditional, melty goodness that makes you close your eyes. The plates come out hot, portions generous, and the service is friendly enough that you’ll forget you’re not at a backyard cookout. Also, brunch until 3pm? That’s a dangerous gift. I went for nachos, stayed for the vibe, and left stuffed.

Las Lomas Mexican Cuisine has this live Banda music on weekends that just makes everything feel like a celebration, and let me tell you, the chili relleno I tried was cooked perfectly, all crispy and gooey. But the real star? The agua fresca. Wow. I’m still thinking about it. The staff is genuinely nice, attentive without being overbearing, and they didn’t bat an eye when my buddy’s kid started fussing. High chairs ready, smiles everywhere. My nachos came loaded, but honestly, I could’ve just sipped that drink and been happy. A solid stop.

Taqueria & Tamaleria Nuevo León is where I go when I need birria that falls apart like a love letter. The trompo tacos are full of flavor, but let’s talk about the nachos because they don’t mess around. Loaded with that tender, juicy birria, every bite is a messy, glorious event. The place has a welcoming, family friendly vibe that makes you want to linger, even when it’s packed. Yeah, there might be a wait, but the crew is so efficient you’ll barely notice. Worth every minute. I’ve already told three people about this spot.

Cafe Gecko Richardson has this patio that’s perfect for people-watching, and the service is attentive from the moment you sit down. I came for the nachos, but the menu is stuffed with brunch options that made me second-guess my order. The Bloody Marys? Worth returning for, no joke. But the nachos? They’re piled high, satisfyingly messy, and the patio is dog friendly, so I brought my pup and we both had a great time. It’s one of those places where you start with a snack and end up staying for hours. I’m not mad about it.

Holy Frijoles is quiet, almost unassuming, but the flavor payoff is massive. The place has a regulars crowd that gives it this authentic family vibe, like everyone knows each other’s names. I felt like I was crashing a good party, but in the best way. The staff didn’t rush me, and the food felt like it was made by someone who actually loves cooking. I’ll be back for sure.

Tavern on Main Street is a local spot through and through. The staff is friendly, always ready to chat, and the pool tables and foosball add to the chaos. Saturday karaoke is a hilarious mess, and I mean that lovingly. The bar is smoky, but it’s manageable if you sit near the fans. My nachos came out loaded, perfect for sharing while I watched the game. The vibe is laid back and good, the kind of place where you can show up solo and leave with new friends. It’s not fancy, but it’s real.
